Are you perhaps confusing an eSIM with a telco technology PSTN?An eSIM is an Electronic Subscriber Identity Module. It's the digital version of the "old fashioned" SIM or the plastic card that you put into the phone to get onto the cellular network. It's not tied to a phone number per se. It's tied to an account that allows you access to the cellular network. The PSTN is the Public Switched Telephone Network. It's the aggregate of all the switched circuit telco systems including cellular.A phone number is just a sequence of digits assigned to an account so that another telco device can connect to it. It's just a "pointer" to an account - you dial the digits and the phone company can make a single phone ring or multiple phones around the planet ring simultaneously (and a number of variations in between).As far as how the iWatch's eSIM works, it is attached to your cellular account and for all intents and purposes, shares your existing phone number. It's not given it's own unique phone number. It's important to note that an eSIM or plain SIM do not have to have a phone number - any mobile hotspot that you can not make calls to wo not have a phone number as the plans for these devices are data only

An Apple Watch Series 4 (along with Series 3) with support for Cellular can make a phone call without an iPhone but will need to be paired with it. Apple Watch Cellular comes with a build-in eSIM. It needs to be paired with the SIM card in your iPhone. Apple Watch Series 4 is typically expected to support all the phone call/cellular features of Series 3.Note: Having an iPhone is a prerequisite for using an(any) Apple Watch. Thus, it's not possible to use an Apple Watch (any generation), without owning an iPhone.

I forgot that I had installed the beta profile on my watch as well as my phone. As soon as I removed the beta profile from within the watch app and rebooted both phone and watch I was able to update to watchOS 3
6. How do I remove apps from my Apple watch?
Open the Watch app on your phone, and scroll down to the apps you have installed. Tap the one you want to remove, and then on the next screen turn off "Show App on Apple Watch". Then you can delete the companion phone app on the phone, if you desire. Remember, you can not uninstall preloaded apps like Breathe, Heart, Calendar etc. Hope that helps!
