This is a great shrimp salad recipe. Fresh shrimp, cleaned and peeled. Peanut oil ginger root, shaved raisins vinegar honey chives limes 2 egg yolks apple Clean shrimp, add 1/2 cup of peanut oil in frying pan over medium - medium high heat. Add shrimp and shaved ginger root to pan and cook approximately 7 minutes. Put raisins in vinegar for approximately 30 minutes. Place shrimp on cutting board, removing and reserving ginger root. Chop shrimp and place in bowl. Add raisins, chives, mix. Make simple mayonnaise with one egg yolk and peanut oil. Add mayonnaise to shrimp mixture. Place discarded ginger root on top of mixture, cover and chill at least 4 hrs. When ready to serve, make second mayonnaise using mustard powder (put 1 tsp. of mustard powder to egg yolk) Peel, core and dice 1 apple. Add apple to shrimp mixture, drizzle with lime juice and add second mayonnaise and serve. As to how many shrimp, how much mayonnaise, to use, figure on 5 or 6 shrimp (jumbo) per person.
