Well the 21 album was mostly sad, due to it being because of a break up. Aside from 19 and 25 (which contain happy songs as well in the mix), there's actually a song in 21 that's incredibly optimistic despite the theme of the album being a sad break up album. It's called One and Only.
It's really nice, in terms of optimism. As as far as why? Well Adele says she writes songs and will feel they are good if they can make her cry.
So since more sad songs make people cry than happy songs, this could also be why there are more sad emotions than happy
